Coolie’s Roof Rooftop Restaurant & Bar Marriott Hotel San Isidro Lima

Type

Restaurant & Bar

Location

San Isidro, Lima, Perú

THE ASIAN PATH

The Asian coolies that were sent from the Spanish Philippines to Acapulco via the Manila-Acapulco galleons were all called Chino ("Chinese"), some of these Asian slaves were also taken to Lima in Peru, where it was recorded that in 1613 There was a small community of Asians made up of Chinese, Japanese, Filipinos, Malays, Cambodians and Vietnamese.

From a chic and relaxed lounge bar at dusk to a lively club until the wee hours of the morning, the rooftop transforms into a hip and trendy bar with the best local DJs.
This cocktail bar will be popular with the modern and connoisseurs. The rooftop will be an elegant bar with an unparalleled air of sophistication and frequented by the "Who's Who" of Sanhattan and beyond.

Such a unique space calls for a unique concept to bring it all together; This connection is best seen in Indochinese cultures, where food and drink play a central role in all special occasions (and vice versa), often with food and drink being the reason for the special occasion. The ideal that unites these varied regions is to balance five elements of flavor: spicy, sour, bitter, salty and sweet. This sense of culinary balance extends to a balance between the “warming” and “cooling” properties of ingredients, properties that may not be immediately obvious to Western diners.

The design is based on iconic moments such as:
• Robata grill and raw cooking
• Exotic Asian-inspired drinks
• Japanese whiskey menu
